Recipe: Risotto

This is my favourite meal to cook at the moment. It takes a little bit longer than most other things I cook but it is so tasty and versatile and I can usually make it with whatever ingredients we have in the house. So here is how I made this one..

Chicken 300g
Bacon 3 rashers
Olive oil 
Onions, chopped 120g
Garlic, chopped 1 Clove
Arborio Rice 180g
One stock cube
Hot water 1 litre
Spinach 120g
Cream Cheese 1 tbsp
Parmesan 1tbsp
Oregano 1 tsp
Sage 1 tsp

I usually start by frying whatever meat I have, today this was chicken and bacon. I do this with a little olive oil in the pan I am going to use for the risotto so that I don't lose any of the flavour. 

Once the meat is cooked transfer into a separate bowl and put it aside for later. 

Add a little more olive oil to the pan if needed and then add the chopped onions and garlic. 

Fry those until theyre translucent then add the risotto rice and let it soak up the oil a little bit. 

Next add the stock a little at a time until it is all absorbed and the rice is just a soft texture. 

Then I stir in the chicken and bacon, add any veg today I had spinach but you can use peas or peppers although I would suggest frying these first with the meat. 

Finally I stir in the cream cheese, parmesan, oregano, sage and sometimes a pinch of black pepper to taste.

I love when summer is over and the leaves fall from the trees and everything around me in the countryside turns from green to beautiful shades of orange and brown. I live for wearing cosy jumpers and fluffy socks. In autumn in the UK we get all of the good TV starting because they know that after a summer of adventures outdoors. Everyone wants to curl up on the sofa with a cup of tea and indulge in some effortless entertainment whether it be Doctor Who, Strictly Come Dancing or The X Factor. The clocks changed back not long ago and although I hate it being dark so early in the evening. I love the crisp, bright mornings, when I get out of bed early enough to see them. Autumn brings pumpkins, costumes and sweets for Halloween. A favourite day for me, second only to Christmas. Then a few days later we light up the sky with fireworks and warm ourselves round bonfires drinking mulled wine. Now that's all over it's time to think about what treats winter will bring.

Lest We Forget

Tower of London Poppies is a beautiful art installation, each poppy commemorates a British military fatality. It marks a 100 years since our first involvement in World War One. Remembrance day is so important and I hope everyone will join me in taking part in the two minute silence later on today.

Jimmy Carr Review

We went to see Jimmy Carr - Funny Business at Cambridge Corn Exchange on Saturday night. Very funny man obviously, I love him on 8 Out of 10 Cats. I don't know why but the audience was a little bit dead but he did very well to still get plenty of laughs. Some of the people around us didn't laugh once but it's safe to say I was in hysterics a lot of the time. Quite a few of his jokes were along the same lines; tax evasion, your mum jokes etc. but all very funny if a little too crude for my taste. He does admit that he pushes the limit sometimes and I wonder if that's what the audience reacted badly to. Still it was a lovely evening out and we were lucky enough to meet him afterwards. He didn't have time to take photos with everyone but I got my ticket signed and he wished me luck with my new job. He is touring for a long while and he's coming back to Cambridge again next month so if anyone gets the chance to see him I would definitely recommend it.

Christmas is Coming!

The John Lewis Christmas advert is on so to me that means its time to start shopping and get excited!!

I am sure I will be sick of this by the time the big day actually comes around but for now I think this is the cutest little story ever.

Here we go.. my first ever outfit post!

It's so sunny today considering its November but it is still pretty cold so the scarf and woolly jumper were welcome. I bought this scarf last winter and absolutely love it, it is super cosy and its one of those huge, blanket sized scarves that you can wrap the whole way round you if it gets colder in the evening. I wasn't sure about the fringe on the boots when I first bought them and I do have a tendency to hack at cheaper clothes to get them looking closer to what I want. However after wearing them a few times I decided I didn't mind the fringe and cutting it off would probably look worse. This New Look bag is my go to for days out when I don't want to lug round a bigger bag but still need to fit in a few more things. It's surprisingly spacious in there, I can even fit in a book or possibly more essential, an umbrella in case the weather turns.

I will leave you with a photo of my hair looking much lighter in colour than it is, proving how bright the sun was!

Stationery Haul

I love buying stationery! I probably own more notebooks than I could ever use now that I'm not studying anything, but I can't resist it. Especially these cute notebooks that I found in TK Maxx the other day. They are from a brand called Eccolo and were really good value for the quality. The three A5 books were £4.99 each and the slightly smaller than A4 pink book was £6.99. Buying four might have been quite excessive but they're not all for me and I felt I needed the motivation and space to write down ideas for this blog. They are somewhere between paperback and hardback and the slogans on them all are positive and inspiring. There were other designs to chose from so I will be keeping a look out for them in other TK Maxx stores.

October Favourites

As it got colder this month I got much more into reading. I have always loved reading but for some reason lately I haven't been able to get into it. It feels like I've got readers block or something! I got Bridget Jones Mad About The Boy at Hay Festival in May and it is signed to me by Helen Fielding herself so its one I have been so keen to read. I decided to listen to it on audible while I read it to see if that helped my readers block (still not sure that's a thing?) and it definitely did. This book was wonderful but heartbreaking and as always with Bridget Jones very funny. I would definitely recommend it.

A few make up favourites this month are the Maybelline Forever Strong Nail Polish in Extreme Blackcurrant. I love this deep purple colour for autumn, it is very dark so it almost looks black in some lights. I would like to find a similar colour but slightly lighter but I love the formula of this. I wouldn't say it last 7 days like it claims, more like 4, but then I am not very careful with my nails. I have also been loving winged out eyeliner lately, I have been using the Seventeen High Drama Intense Liquid Eyeliner in Blackest Black. I am not very practised in applying it yet but I love the way it looks. I would never normally do anything with my makeup that takes that much effort but I did it when i dressed as cat for Halloween and fell in love with it.

I can't get enough of the Zoella Beauty Blissful Mistful body mist. I hunted for this in all of my local Superdrug stores for ages with no luck it seemed to be sold out everywhere. Hardly surprising, given how huge Zoella is, that her products were in high demand. When I eventually found it I was actually a bit disappointed by the scent, I thought it smelt a bit too fruity and summery for a fragrance released in Autumn but after wearing it for an hour or so it smells so much nicer. I have been reaching for it almost every day since I bought it so that must be a good sign.

One thing I have loved that I couldn't take photos of is my film favourite; Divergent. I didn't bother reading the book or going to see this at the cinema. I wasn't really interested and thought it had been hyped up a bit too much after the success of The Hunger Games which I absolutely love. We rented it on Love Film and I honestly thought it was so gripping and have since read the book and am now half way through the second book. I am hooked!

Finally earlier in the month I went to see Nick Mulvey at Cambridge Junction. His music was so lovely and chilled and I have been listening to the song Fever to The Form loads.

Welcome to Jessiness

It's hard to know what to say in my first post and since I will probably look back on this one day and laugh at it no matter what I write, I might aswell keep it simple.

I have decided to start a blog because I love writing but don't have the imagination to write a novel. People say do what you know and what do I know? My life. I have loved reading lifestyle, beauty and fashion blogs for years and I don't know why it has taken me this long to start my own.

I plan to write about places I go, music I hear , shows I see and meals I eat. I don't know much about beauty and fashion but I certainly have my own opinions and taste to share occasionally. Speaking of taste I love to cook and experiment with food and test it out on my unsuspecting family and friends. So I hope to share some favourite recipes and maybe the things that have gone wrong!

I look forward to seeing where this new adventure will take me...
